Morston Hall is an award winning venue and one of the longest running Michelin starred restaurants in the UK. The daily changing menu allows our exceptional team of chefs, to express their creativity and flair alongside their uncompromising commitment to sustainability and quality ingredients which evolve with the seasons.

Each day at Morston Hall begins with the land and sea just beyond our doors — from the kitchen garden outside the window to the small-scale suppliers we’ve worked with for decades. The result is a meticulously crafted daily changing tasting menu that’s as refined as it is grounded; timeless, elegant, unpretentious, and capturing the very essence of the Norfolk coast.

You are invited to arrive at 6pm for pre-dinner canapés and drinks before sitting down for dinner at 7pm.

Rooted in Norfolk’s natural larder and led by a team with decades of experience, our approach to fine dining is thoughtful, expressive, and quietly assured.


A Menu That Changes with the Day


At Morston Hall, dining is a crafted ritual — one that begins each morning with what’s fresh, local, and in season. There is no static menu here. Instead, each evening offers a new iteration of the same philosophy: to serve a Michelin-starred tasting experience that honours flavour, craft, and place.

The extensive tasting menu is created daily, responding to the rhythms of the seasons and the produce that arrives at the kitchen door. Whether it’s heritage vegetables from the garden, day-boat seafood from the Norfolk coast, or sustainably sourced game meat from trusted suppliers, each ingredient earns its place through quality and seasonality.

This format allows the kitchen to remain agile and expressive — creating a dining experience that is thoughtful, refined, and deeply rooted in the landscape. Guests are invited not to choose, but to trust: every dish is a new reflection of what Norfolk tastes like today.

Homegrown Inspiration

Just beyond the kitchen door lies one of Morston Hall’s greatest assets — the kitchen garden. It’s more than a source of ingredients; it’s a living, evolving extension of the restaurant itself and central to our seasonal, produce-led philosophy.

Our chefs work closely with head gardener Robin, planning months in advance to bring interesting and unusual ingredients to the dining experience and cocktail menus. Everyday we use something from the kitchen garden in our menu.

From heritage tomatoes, courgette flowers and soft herbs to figs, baby beets and edible blooms, the kitchen garden offers both ingredients and inspiration. Many dishes begin their journey here, rooted in the soil and brought to life just hours later on the plate.

This garden-to-table philosophy ensures every menu feels fresh, intimate, and local — a reflection of Norfolk’s abundance, crafted with precision and served at its seasonal best.

Galton Blackiston has defined the dining experience at Morston Hall for over three decades. A self-taught chef with deep Norfolk roots, his commitment to seasonality, locality, and elegant simplicity has earned the restaurant a Michelin star for 27 consecutive years — one of the longest-held in the UK.

Known for his instinctive cooking style and unwavering pursuit of flavour, Galton’s menus are both grounded in British tradition and shaped by the landscape around him. What began as a humble passion for local ingredients has become a hallmark of fine dining in Norfolk — one that continues to evolve, delight, and set the standard.

The local area has shaped my approach to cooking. Having been here for more than three decades, the produce you get from Norfolk and East Anglia is my world.
