Four Centuries of Heritage, Rooted in Norfolk
Morston Hall traces its roots to the 17th century, when the Townshend family established the house around 1640. Built as a traditional Norfolk manor on the edge of the coast, it has lived many lives over the centuries — from private residence and working farm to elegant rural retreat. Throughout, it has remained closely tied to the surrounding landscape and the gentle pace of life found in this corner of East Anglia.
In 1992, Galton Blackiston took co-ownership of the house, bringing with him a vision for something extraordinary: a refined yet relaxed country retreat rooted in food, hospitality, and a deep respect for Norfolk’s produce. With just four bedrooms and a handful of tables, Morston Hall began its transformation — evolving into one of Britain’s most respected dining destinations.
In 1998, the restaurant earned its first Michelin star, which it has proudly held for over 27 consecutive years. This distinction places Morston Hall among the most enduring Michelin-starred establishments in the UK — a testament to Galton’s craft and relentless drive for culinary perfection.
Today, the property is home to 13 thoughtfully appointed rooms, combining the intimacy of a private home with the experience of a luxury escape. Morston Hall remains, above all, a place where food, service, and setting come together with warmth and purpose — a restaurant with rooms, shaped by its heritage and fuelled by the seasons.

A home with history
Just beyond the kitchen door lies one of Morston Hall’s greatest assets — the kitchen garden. It’s more than a source of ingredients; it’s a living, evolving extension of the restaurant itself and central to our seasonal, produce-led philosophy.
Our chefs work closely with head gardener Robin, planning months in advance to bring interesting and unusual ingredients to the dining experience and cocktail menus. Everyday we use something from the kitchen garden in our menu.
From heritage tomatoes, courgette flowers and soft herbs to figs, baby beets and edible blooms, the kitchen garden offers both ingredients and inspiration. Many dishes begin their journey here, rooted in the soil and brought to life just hours later on the plate.
This garden-to-table philosophy ensures every menu feels fresh, intimate, and local — a reflection of Norfolk’s abundance, crafted with precision and served at its seasonal best.

Galton Blackiston’s journey from a self-taught young chef to one of Britain’s most respected culinary figures is a story of passion, perseverance, and an unwavering commitment to excellence. Born in Norfolk, Galton initially pursued a career in cricket before discovering his culinary calling through a humble market stall, “Galton’s Goodies,” where he sold homemade cakes and preserves.
In 1992, Galton transformed the 17th-century Morston Hall into a country house hotel and restaurant. Under Galton’s leadership, Morston Hall was awarded its first Michelin star in 1999, an accolade it has retained for 27 consecutive years, making it one of the UK’s longest-standing Michelin-starred establishments. His culinary philosophy centers on simplicity, consistency, and showcasing the finest seasonal ingredients. Galton emphasizes sourcing local produce, including Norfolk mussels, Blakeney lobster, and game, complemented by home grown produce from Morston Hall’s own kitchen garden. Collaborating closely with head gardener Robin, Galton ensures that the kitchen garden thrives, providing fresh, organic ingredients that reflect the changing seasons. This partnership underscores Morston Hall’s commitment to sustainability and a farm-to-table dining experience.
